Avocado Gazpacho



  • 300 gr avocado
  • 1/2 onion
  • 1 garlic clove
  • 1 cucumber
  • 150 ml almond milk
  • 200 ml of water
  • 3 spoons of olive oil
  • 3 spoons vinegar
  • 1 pinch of salt



  1. Put all the ingredients in a blender.
  2. Blend them until thick (add water if too thick).
  3. Add the toppings you like: fried bread, tofu, cucumber, parsley,...

Ready to eat! :)
